Amanda

Hi, my name is
Amanda!

And quickdinnermom is my little corner of the internet!

I launched quickdinnermom back in 2016 while I was still a marketing analyst at a tech startup in Austin. After a long day of spreadsheets, I was scrambling to get dinner on the table for my two kids, Lily (7) and Noah (4). The first post was a simple “5‑Minute Chicken Stir‑Fry” that I filmed on my phone between conference calls. That humble recipe sparked a habit of writing down the meals that actually worked for a busy family, and the blog was born.

The site grew faster than I expected. By the end of 2019 we were hitting 10,000 unique visitors each month, and in 2020 I released my first e‑book, “30 Quick Dinners for One‑Pan Families,” which sold over 3,200 copies. In 2022 I added a free weekly meal‑plan newsletter that now reaches more than 12,000 subscribers. As of March 2024 quickdinnermom draws about 45,000 visitors monthly, has been featured in Family Food Magazine (June 2023), and partnered with the Austin Community Co‑op to offer a “Dinner Box” program for local families.

When I’m not testing a new sauce or writing a recipe, you’ll find me in the backyard garden or hiking the Hill Country trails with Mark, my husband, and the kids. Saturday mornings are reserved for the local farmers market where I pick up heirloom tomatoes for my favorite fresh salsa. I also love curling up with a good mystery novel after the kids are in bed. Those simple moments keep me grounded and inspire the quick, comforting meals I share on quickdinnermom.
